Now that my son is back in school again, I’m always trying to come up with snacks to pack into his lunch box.

Lately, we’ve been making a double batch of this carrot cake version along with his newest obsession –> crunchy pumpkin granola.
It’s full of giant crunchy clusters in every bite and loaded with the warm and cozy spices that just scream fall.
The pumpkin puree and maple syrup add flavor and bind the granola together while the pecans and pumpkin seed provide protein, crunch, and an extra pumpkin factor.
Finally, the wholesome gluten free oats and ground flaxseeds add extra fiber, protein and whole grain goodness.
The recipe is simple to put together and can be in your oven in less than ten minutes. To get the giant crunchy clusters, be sure to remember not to stir the granola while it’s baking, then once it cools, we just break it apart into big chunks.
