This cookie is one big skillet of love, and that’s what makes it so heavenly to begin with. Skillet cookies are something special. They’re so easy to make and perfect for sharing with a crowd.
This Chocolate Pecan Pie Skillet Cookie takes an easy and delicious twist on the classic pecan pie. A little extra crispiness on top, followed by more gooeyness in the middle and loaded with peanut butter and chocolate.
It’s super easy to whip up too! You can either use my peanut butter and oatmeal cookie base or your favorite ready made cookie dough and layer on the chocolate and caramel pecan topping.
No mixer required too! Just pop it in the oven and it bakes up in less than 30 minutes.
Don’t forget to serve it with a scoop of ice cream! It’s a delicious and fun dessert to serve to all your guests!

Ingredients
Chocolate Pecan Caramel Filling
1/2 cup semi-sweet chocolate chips
1 - 1 1/4 cups of pecan halves
1/2 cup unsalted butter, melted and slightly cooled
1/2 cup corn syrup
1/3 cup granulated sugar
1 egg
1/4 teaspoon salt
1 teaspoon cornstarch
Oatmeal Peanut Butter Skillet Cookie
1 cup all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups old fashioned oats
2/3 cup butter, melted
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 large egg, room temperature
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1/4 cup peanut butter chips
*Melted chocolate for topping (optional)
Instructions
- Preheat oven to 350ºF and grease the bottom and sides of a 9-inch cast-iron skillet or 9” round baking pan with cooking spray or butter.
Make the Chocolate Pecan Caramel Filling: Whisk together melted butter (slightly cooled so you don't cook the egg), corn syrup, sugar, egg, salt, and cornstarch in a large bowl. Set aside.
Make the cookie: In a large bowl, whisk together the flour, baking soda, and salt. Stir in the oats. Set aside.- In another large bowl, whisk together the melted butter, granulated sugar and brown sugar until smooth. Add peanut butter and mix until incorporated. Whisk in egg and vanilla until smooth and combined.
- Slowly stir in dry ingredients to the wet ingredients and mix until just combined. Be careful not to over-mix. Fold in the chocolate and peanut butter chips.
- Press the cookie dough into the prepared skillet. Sprinkle the center with chocolate chips, then top with a single layer of pecans and pour the caramel filling over the top.
- Bake for 23 to 25 minutes, until a toothpick inserted in the dough comes out clean or the edges are slightly crisp,and the cookie is golden and filling is cooked through.
- Remove from oven. Drizzle with melted chocolate and serve warm with a scoop of vanilla ice cream if desired.
