Since it’s the last day of August, I thought I would sneak in one more recipe using up one of my favorite summer fruits.
I always get super excited when peach season rolls around. Peaches are in their prime right now and there’s nothing better than chomping down on a juicy and fragrant peach when you need a refreshing snack.

These fruity oat bars are another great way of enjoying fresh summer peaches.
They’re easy to make and perfect for bringing to a summer potluck or end of summer barbecue.
The buttery streusel crust and topping is made with certified gluten-free rolled oats, gluten-free oat flour, cinnamon, brown sugar and butter.
With a juicy peach filling that is sweetly spiced — these bars are chewy and moist with a slight crunch thanks to the streusel topping and toasted coconut added at the end.

An optional drizzle of Dulce de Leche ties everything together and takes these bars to a decadent level that will make it hard to resist not eating the entire batch.
Make sure you have a crowd to share them with since they can be quite addicting and be prepared to have the complements rolling in.

Yields 8x8 square pan or 12 large squares
These chewy buttery oat streusel bars are filled with fresh summer peaches and topped with crunchy toasted coconut followed by a drizzle of Dulce de Leche. Feel free to substitute with your favorite fruit. Be sure to use certified gluten-free oats if gluten is a concern.

Ingredients
1 cup gluten-free oat flour (I grind my own from old fashioned rolled oats) (can substitute with all purpose flour)
1/2 cup certified gluten-free old fashioned rolled oats (you can use all quick oats if you prefer
1/2 cup of certified gluten-free quick oats (you can use all old fashioned oats if you prefer)
1/2 cup dark brown sugar
1 tablespoon ground cinnamon
1/4 teaspoon of salt
1/2 cup unsalted butter, cold and cubed
1/4 cup toasted shredded coconut
2 cups of fresh peaches, peeled and chopped (I used 3 medium peaches)
1 large egg, room temperature
1/2 cup of honey or agave syrup
2 tablespoons of gluten-free oat flour
Dulce de Luche. homemade or storebought
12 peach slices
Instructions
- Preheat oven to 350F degrees.
- Line a 8x8 square pan with aluminium foil large enough to overlap the sides for easy removal. Spray foil with nonstick baking spray.
- In a medium bowl whisk together the oat flour, oats, sugar, cinnamon and salt. Use a pastry or two forks to cut in the butter until it resembles coarse pea-sized crumbs. Press half of the dough into the prepared pan. Bake in preheated oven for 10 minutes. Set aside the rest of the streusel in the fridge for the topping.
- In a medium bowl, whisk the egg and honey until smooth and creamy. Add oat flour and cinnamon whisking until combined. Fold in the peaches.
- Remove the crust from the oven after 10 minutes. Pour filling evenly over crust. Top with remaining streusel and the toasted coconut. Place peach slices evenly spaced over the pan. Bake for 30-35 minutes or until golden brown on top.
- Allow the pan to cool completely before cutting into squares or chill in refrigerator for 1-2 hours.
- Drizzle dulce de luche over bars if desired.
Notes
Feel free to use all rolled oats or quick oats. I like to use a mix of both for the texture. You may substitute all purpose flour if desired and gluten is not a problem.
