Ingredients
1 1/4 cup all purpose flour
1/2 cup of granulated sugar
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/3 cup non-fat buttermilk, room temperature
1 large egg, room temperature
1 tablespoon coconut oil, melted and cooled (or use vegetable oil)
1 teaspoon pure vanilla extract
1/3 cup fresh strawberries, finely chopped
juice and zest from 1 large lemon
Strawberry Frosting
1/4 cup strawberries, finely chopped
1 tbsp butter, softened
1 Greek yogurt (I used non-fat)
2 cups confectioner’s sugar, sifted
Instructions
- Preheat oven to 375 degrees F.
- Lightly spray donut pan with baking spray.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a liquid measuring cup, pour in the buttermilk and whisk in egg, vanilla extract, lemon juice, lemon zest and melted coconut oil.
- Add the liquids to the flour mixture stirring with a rubber spatula until just combined. (Please be careful not to OVERMIX).
- Gently fold in the finely chopped strawberries.
- Using a small spoon fill each donut pan about 3/4 of the way full.
- Bake for 9-11 minutes in preheated oven until toothpick inserted into center of doughnut comes out clean.
- Allow donuts to cool in the pan for about 5 minutes before inverting onto a wire cooling rack to cool completely.
- While the donuts are cooling, prepare the strawberry frosting.
Frosting- In a medium bowl, mash strawberries using a fork. Add softened butter, Greek yogurt and 3/4 cup of the powdered sugar and continue mixing with the fork until the frosting is incorporated. It may seem like the frosting isn’t coming together, but keep stirring. Continue adding confectioner’s sugar 1/4 cup at a time until you reach desired consistency. (You may not need to use all of the powdered sugar).
- Spread frosting onto cooled donuts.
- Top with sprinkles if desired.
